Depleted Reserves and Yield Declines

Maple syrup chart

The global maple supply is under unprecedented pressure. Canada produces 70% of the world’s maple syrup and is facing a severe yield reduction, estimated at just 70% to 80% of last year’s crop. The U.S. crop is also down, hovering around 90% to 95% of previous levels due to extreme weather swings during tapping season.

Most alarmingly, Canada’s Global Strategic Maple Syrup Reserve is currently empty. Without this crucial buffer stock, any further disruptions will immediately impact pricing. Consequently, our suppliers have confirmed a 10% to 15% price increase across all maple products, compounded by weather conditions, labor constraints and rising fuel costs.

Surging Demand for Natural Sweeteners

Market Indicators

While supply tightens, consumer demand for clean-label ingredients is accelerating. Currently, 77% of consumers express a preference for natural sweeteners. Food manufacturers are increasingly turning to maple syrup for its flavor complexity and sustainability, driving a 7% to 10% market expansion among large-volume suppliers in 2025. The U.S. maple syrup market is projected to grow at a 6.8% CAGR through 2034. This intense competition means securing your required volumes is critical.

Secure Your Supply Today

At ICI Foods, our deep industry relationships position us to guide you through this volatile landscape. We’re already seeing severe shortages in specific grades; for example, Very Dark Strong Grade A currently accounts for just 1% of the crop at our major supplier, down from a typical 7% to 8%. Commercial Grade availability is also highly constrained.
